92 Jahre junge Theresia aus Wien bäckt Vaniliekipferl nach dem Rezept ihrer Mutter.
Zutaten:
120g glattes Mehl
45g Butter
45g Margarine
50g frisch geriebene Walnüsse
30g Staubzucker
Vanillezucker
Staubzucker
Zubereitung:
Mehl, zimmerwarme Butter-Margarine Mischung , die frischen Walnüsse mit Zucker und Vanillezucker vermischen und zu einem Teig kneten. Je nach Konsistenz kommt jetzt etwas Eidotter dazu oder nicht. Den Teig ein paar Minuten kneten bis er eine schöne Konsistenz hat. Den fertigen Teig in Frischhaltefolie wickeln und 30 Minuten im Kühlschrank rasten lassen.
Dann die Kipferl formen und auf ein Blech mit Backpapier legen. Die Kipferl im vorgeheizten Backrohr bei 180 Grad bei Ober-Unterhitze 10 Minuten backen. Die Kipferl sind fertig, wenn sie auf der Unterseite braun gebacken sind. Die noch warmen Kipferl mit ein einer Staubzucker/Vanillezuckermischung bestreuen.
Die Vanillekipferl in einer Keksdose an einem kühlen Ort lagern.
Tipp:
Achte drauf die Butter/Margarine schon eine halbe Stunde vor der Zubereitung aus dem Kühlschrank zu stellen.
